Dot's amazing Muesli bar


This Muesli bar is truly amazing. It is the recipe of a good friend's mother. Any shop bought Muesli bars can't beat this homemade one.


  • 1 cup rolled oats
  • 1/2 cup desiccated coconut
  • 1/4 cup flaxseed (linseed)
  • 1/4 cup sunflower seeds
  • 1/4 cup pepitas
  • 1 cup almonds (or other nuts of choice)
  • 1/2 cup goji berries
  • 1/4 cup LSA (Linseed, sunflower seed and almond meal)
  • Approx. 1/2 cup dark chocolate (90% cocoa)
  • 100 grams of butter
  • 1/2 cup honey

Start by placing the ingredients from rolled oats to the nuts on a baking tray. Roast for 10 minutes in 180 C (350 F) for approx. 10 minutes. Then transfer to a metal or glass bowl.

Add the goji berries, LSA and dark chocolate. 

Cook the butter and honey in a saucepan over medium heat. Stir until combined and melted. Bring the mixture to the boil, then reduce to simmer, without stirring, for 5 minutes.

Add the butter mixture to the dry ingredients. Stir through.

Place mixture into a lined tin and press down firmly. Leave to cool and then place in the fridge. After approx. 2 hours you can pull out the slice and start cutting it up into bars. As these Muesli bars can melt quite easily it is best to store them in the fridge.
