Mango, Banana, Macadamia ice cream
With the start of the mango season here in Cairns I had to make the first ice cream (nice cream) of the year. And here is the recipe:
Ingredients (for 3-4 serves):
- 3 frozen bananas
- 1/2 cup nut milk, milk or water (your choice)
- 2 mangos (from the fridge)
- 1/2 cup macadamia nuts
- 1/4 cup desiccated coconut
- 1/4 cup flaked almonds
Add your chopped bananas, mangoes and milk into a food processor. Blend until smooth. In the meantime chop macadamia nuts and then roast in a frying pan together with the almond flakes and desiccated coconut until lightly browned.
Pour banana/mango mixture into a bowl, top with nut and coconut mix and you are done.
